Cod and Gnocchi Traybake

…beacause we all love a traybake! I make traybakes pretty much most weeks, they’ll feature on my meal plan in some shape or form! For a number of reasons, they’re easy, they’re pretty quick, there’s minimal washing up, it’s barely even cooking so you don’t need to worry about any technical ability the oven does all the work AND traybakes are usually gobbed up by the kids so it means we have full and happy tummies when i pull out a traybake!

They are perfect for mid week, get your kids to serve themselves straight from the tray and you literally have one pan to wash up at the end…this may have two small bowls to wash up but it’s totally worth it! Promise!

So yeah this week’s version was a cod and gnocchi traybake. Gnocchi is another winner with my kids they absolutely love it! You don’t even need to boil the gnocchi beforehand just throw it into the tray and the oven crisps them up almost like mini roast potatoes without any of the hassle!

So simply load your tray up with gnocchi, some broccoli florets, sliced courgette and some vine tomatoes, drizzle with some olive oil, sprinkle some garlic powder over and season..

Meanwhile make up your marinade…

Now drizzle this all over the gnocchi and veggie traybake then pop into the oven at 180C for 20 mins…

Whilst this is cooking whizz up some breadcrumbs with a small handful of pinenuts in a food processor and leave aside.

IMG_2681.JPGGrab your cod fillets and spread some pesto over the top of each and then top with the breadcrumb mix. After 20 mins remove the traybake, turn your veg over and mix and then add your fish fillets on top, pop back into the oven for a further 10/12 mins until the fish is cooked through!

….and voila dins is served!…

What you’ll need:

  • 4 cod fillets
  • Jar of sun-dried tomato pesto
  • 1 tbsp of sun-dried tomato paste
  • Olive oil
  • Fresh basil leaves
  • Broccoli florets
  • breadcrumbs
  • Handful of pinenuts
  • Courgette – thickly sliced
  • Vine tomatoes
  • 1 tsp garlic powder

And here’s what you need to do:

    • 1 tbsp @sacla_uk sun-dried tomato pesto,
    • olive oil to loosen the mixture and
    • some fresh basil leaves…
    • mix well.
  • Now drizzle this all over the gnocchi and veggie traybake then pop into the oven at 180C for 20 mins…

  • Grab your cod fillets and spread some pesto over the top of each and then top with the breadcrumb mix.
