Monday – Picnic tea

What about doing some egg mayonnaise sandwiches, Trail mixes are good for lunch or tea on the go, try some nuts, pretzels, dried fruit and popcorn.

For dessert why not try some fruit salad with some apricot and coconut bliss balls. You can find the recipe from

They are really quick to make, really tasty and can be nut free if you substitute the almonds for oats! Win, win!

Tuesday – Chicken with mash potato cakes.

Mash potato cakes: Simply roll some mash potato into a pattie shape then lightly dust with flour before gently frying. If you have any left over mash this is a great way to use it up and offer it in a different way. The crunchy texture always seems to be a winner with my kids. Pop some chicken in the oven or simply fry some mini fillet with some oil and some herbs and squeeze of a lemon and serve with the mash and some veg.

FridayKedgeree

I used this recipe as a base but didn’t include the cinnamon stick. I used wholegrain rice instead so used a little bit more stock as wholegrain tends to take a little longer to cook. I also used pre cooked smoked mackerel which works just as well, i just flaked this into the pan at the end to warm through.

Sunday – Lemon chicken traybake

I am such a fan of traybakes as they are totally hasslefree!! For this one i used this BBC recipe

For a slightly healthier take on this substitute the potato for sweet potato and for the last 5 minutes try popping in some kale to brown and crisp. Yummy and so easy with barely any washing up! Serve with some roasted cauliflower. Just add a crushed clove of garlic, drizzle with olive oil, season and pop in the oven for 20 mins. Low key Sunday cooking!
