I’m back with another delicious recipe…well i hope you think it is! Other than the time marinating your chicken this is actually SUPER SPEEDY and tasty too! Lots of you have been requesting this recipe so I really hope this doesn’t disappoint and that your family love this one!
So let’s get straight to it!
You need to start by marinading your chicken. So add all the marinade ingredients into a bowl with the chicken, mix it all together, pop a lid on and then pop into the fridge for 20 mins or so or up to 24 hours. Alternatively use a zip lock bag. Just make sure your chicken is totally coated.
If you’re using wooden skewers remember to soak these in water first so that they don’t burn under the grill. Otherwise metal ones are fine too!
When you’re ready to cook take the chicken out of the fridge and thread the chicken mini fillets onto your skewers ready to pop under the grill.
I used two mini fillets per skewer…
Meanwhile pop the kettle on ready for your veg and your couscous and turn the grill on.
Once the water has boiled get your beans and peas on the boil, drain and then leave aside and at the same time fry off your diced chorizo.
Now for the couscsous grab a bowl and add a stock cube. Then pour in your boiling water to dissolve. Use enough water as per your packet instructions. The amounts below are based on my Sainsbury’s couscous!…Alternatively use boiling ready made stock instead of water and a stock cube!
Once the stock cube has dissolved add your couscous, stir and then pop the lid on for 2 mins or until the water has been absorbed. Then fluff with a fork and add your spring onion.
…and then add your beans and chorizo including all the fat that comes out of the chorizo that adds to the flavour…YUM!
When I made this I decided to add peas at the last minute hence why they’re not in this photo below but cook these with your beans and add at the same time! Add to your couscous and then stir and season.
Meanwhile pop your chicken skewers under the grill, turning occasionally so that they are cooked all the way through.
Once your chicken is cooked through simply plate up with a big spoonful of the couscous!..and you’re done!! Quick and tasty and everything always tastes better on a skewer right? Well it does when my kids are concerned!! If you don’t want to use skewers you can simply fry your mini fillets in a little oil or even pop into the oven…….but skewers always seem to get my kids vote!!
So to recap for the chicken you’ll need:
- 450g chicken mini fillets
- 2 crushed garlic cloves
- 1 tbsp smoked paprika
- 1 1/2 tbsp honey
- 1 tbsp olive oil
- Salt and pepper
For the couscous you’ll need:
- 150g couscous
- 200ml chicken stock
- Diced chorizo (half a ring)
- Green beans – chopped
- Peas
- Spring onion – finely sliced
And here’s what you need to do:

- If using wooden skewers remember to soak these in water first.
- When you’re ready to cook take the chicken out of the fridge and thread the chicken onto your skewers. I used two mini fillets per skewer.
- Meanwhile pop the kettle on ready for your veg and your couscous and turn the grill on.
- Once the water has boiled get your beans and peas on the boil, drain and then leave aside and at the same time fry off your chorizo in a frying pan, don’t discard the oil which comes out of the chorizo.
- In a separate bowl add your stock cube and then pour in boiling water as per your packet instructions and dissolve the stock cube. Alternatively use boiling pre made chicken stock.
- Once the stock cube has dissolved add your couscous, stir and then pop the lid on for 2 mins or until the water has been absorbed. Then fluff with a fork and add your finely sliced spring onion together with your cooked beans, peas and chorizo with the chorizo oil. Stir and then season well.
- Meanwhile pop your chicken skewers under the grill turning occasionally so that they are evenly cooked.
- Once your chicken is cooked through simply serve with your couscous!
