I absolutely love summer food, fresh and crisp salads and healthier, lighter meals…all washed down with a glass of rosé if i have my way!…BUT i also totally love the change in weather and the move towards more Autumnal warming, hearty and comforting food….this casserole falls into the Autumn category. It’s slightly spiced to give you that warm cosy feeling..it’s always a winner in this household…probably because sausages are involved!!…but yep always clean plates and full and warm tummies!
So start by frying off a diced onion in a little oil, after a few minutes add
1 crushed garlic clove, 1 tsp cumin and 1 tsp turmeric. Stir for a few minutes to release the aroma of the spices.
Next add 2 chopped fresh tomatoes. This will help to deglaze any spices stuck to the bottom of your pan.
Next in goes your chopped sausages, i use turkey sausages to reduce the fat content but any sausages would work
Now add some chopped, peeled potatoes, keep them small
Add a cup of water and stir.
Now turn the heat down and pop a lid on top and cook for 10 mins
After 10 mins stir and check it’s not catching at the bottom, if it is add a touch more water and cook for a further 10 minutes with the lid on until the potatoes and sausages are cooked through and almost falling apart. This will help to thicken the sauce.
Finally stir through some spinach until it starts to wilt and then you’re ready to serve.
So just to recap here’s what you’ll need:
- 1 onion – finely diced
- 1 garlic clove – crushed
- 1 tsp turmeric
- 1 tsp cumin
- 2 chopped tomatoes
- 8 Turkey sausages – chopped
- 3 medium sized potatoes peeled and diced
- 1 cup water
- Large handful of spinach
Here’s what you need to do:

- Next in go your chopped sausages – stir to brown slightly
- Now add your potatoes followed by a cup of water, season well and stir
- Turn down the heat and pop a lid on top and cook for 10 mins.
- After 10 mins stir and check it’s not catching at the bottom, if it is add a touch more water and cook for a further 10 minutes with the lid on until the sausages are cooked through and potatoes almost falling apart. This will help to thicken the sauce.
- Finally stir through some spinach until it starts to wilt and then you’re ready to serve.
Serve with some additional veg, broccoli in this case and even some crusty bread to mop up the sauce.
