Easy, quick, tasty and light which is exactly what you want in this mini heatwave we’re experiencing! There’s actually very little actual cooking involved with this one…it’s more a case of chopping, scattering and assembling! It honestly takes 15 mins…10 mins to cook and 5 mins prep….and then you get something like this….
Here’s all you’ll need for the fish:
So once you’ve prepped the coriander, ginger, garlic and chilli grab yourself a large piece of greaseproof paper and pop your fish on top before adding all the additonal ingredients..
Then make them into a parcel and pop in the oven…
It literally takes 10 mins at 180C….
and then serve with couscous and some veg….
So what you need:
For the fish:
- Cod fillets
- Garlic – finely sliced
- 1/4 inch ginger – cut into thin matchsticks
- Handful of coriander
- 1/2 chilli finely chopped (optional
- 1 tsp each of tamari, groundnut oil, garlic oil & sesame oil
For the couscous:
- Couscous
- Veggie stock cube
- Handful of coriander
- Olive oil
- Flaked almonds
- Coriander
- Chopped spring onion
What you need to do:
For the fish
- Place the cod fillets into the centre of a large piece of grease proof paper
- Now scatter the remaining above ingredients over the top, then simply fold the paper up to form a parcel…then bake in the oven for around 10-12 mins…
For the couscous
- Make the couscous as per the packet instructions but add the stock cube in to the water and then once the water has been absorbed simply stir through the extras!
Serve with some added veg – SIMPLES!!!
This also tastes good with salmon…
