Chicken and Rice Casserole

So today was one of those days where you make it up as you go along! I had a busy day prepping food for tomorrow’s dinner party so this was a throw it all in and hope for the best!…and quite often it’s these type of meals which end up being the most successful! we had thumbs up from both kids tonight….hurrah!

All cooked in one pan too so very little washing up which keeps mama happy!…I topped these with some croutons I had which Alfie loves so this definitely helped him dive into the dish!

Very simple dish so here’s the how to:

Start with frying your onion and garlic until soft and then add your chicken thighs and a big dollop of mustard, be generous..

Next add some thyme and salt and pepper and then in go your liquids…lemon, wine and stock..

Let this simmer away for around 30 minutes and then you can add your rice…make sure the rice is fully heated through. I’m using frozen rice here but you can easily just chuck in some leftover rice for this or boil some, drain when cooked and then add to the pot.

Once this has heated through and the sauce has thickend slightly you can add your vegetables. Add a large handful of spinach and your courgettes

Stir through until the spinach has wilted and the courgettes just tender.

Finally stir through a couple of tablespoons of creme fraiche, a squeeze of lemon and you’re ready to serve

So just to recap here’s what you’ll need:

  • 1 onion – diced
  • 1 garlic clove – crushed
  • Chicken thighs
  • 1 glass of white wine
  • 500ml chicken stock
  • 1 glass of white wine
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • Fresh thyme
  • Juice of half a lemon
  • cooked/leftover rice
  • Spinach
  • courgette – sliced
  • salt and pepper
  • 2 tbsp creme fraiche

and here’s what you need to do:

  • Start with your onion and garlic, fry until soft.
  • Then add your chicken thighs and cook for a few minutes
  • Next in goes the honey, mustard, thyme and some seasoning
  • Now add the liquids…lemon, stock and wine.
  • Allow to simmer for 30 mins then add your rice
  • Finally add your veg and simmer until the spinach has wilted and courgettes just tender.
  • I served with some crunchy croutons I had leftover which Alfie loved!! Sometimes it helps to have something you know your kid loves to lure them in!
