Weekly Meal Planner w/c 7th May

Hello hello!

Here it is…the next weekly meal plan instalment for you all! I do have to put out a disclaimer though this week as my mother-in-law and sister-in-law are coming to stay for a couple of weeks so this may change a little depending on their plans…impromptu meals out etc etc! (Here’s hoping!!)…BUT i’m hoping it will look something very similar to the above!

So as always i’ve attached the Shopping list for you here which I hope helps!

Weekly Shopping List 7th May

Monday: Halloumi wraps: This was so easy to make and I was actually quite surprised Alfie ate his with very little fuss about the veg being fairly prominent!! So this was really simply, griddled halloumi, grated carrot and grated courgettes wrapped into a wrap and then griddled to warm through. For a slightly more adult version add a lemon, honey and mustard dressing before wrapping up…or you could maybe try adding some sundried tomato pesto, or a garlic mayonaise perhaps…simple, quick and tasty and certainly did the job!

Tuesday: Packed teas and then adult tea! Mushroom and bacon risotto..I have had a change of heart and the kids are now doing swimming again!!!!! haha!! So now you’re going to have to hear me banging on about that every week and the joys of making a packed tea which i’ll take with me!! But yes i’ll be back on it with lunchboxes and then for dinner with my in-laws i’m planning on doing a mushroom and bacon risotto…yum!

Wednesday: Tuna Meatball subs: Maisie has gymnastics (gosh it’s all go!!) so we need to have a quick and slightly early tea so i am going to prep the tuna meatballs beforehand then simply heat them up and pop them into some sub rolls and probably serve with some potato wedges on the side and some veg! I’m going to take the recipe from My Fussy Eater. For the adults I do these meatballs with spaghetti??

Thursday: Sticky Chicken traybake. The easiest of meals to do when entertaining as there really is minimal effort and washing up yet traybakes can be full of flavour and crammed with veggies too! Yum, i’m looking forward to this one! For the full recipe just click here: Sticky Chicken Traybake

Friday: Loaded Beef Nachos: Maisie has requested loaded nachos so her wish is my command! Beef mince packed with grated veggies and added spices and then piled on top of some homemade nachose and then topped with cheese, avocado, tomato…etc! Perfect Friday fodder!

Saturday: Pea and chorizo frittata bites. I’m going to cook this in the oven and then cut into little bites…I might do a picky tea type meal with these to go with!..the ful recipe is just here: Pea and Chorizo Oven baked Frittata

Sunday: My mum is over looking after my sister’s kids as she’s doing the Moon Walk so am hoping we may get a pub lunch out with my mum and then all the cousins!

…..and then it will be Monday again!!!!!
