So this week is slightly different to the usual weekly planner as I am off on HOLIDAY!!!!! I am going away for 3 WHOLE NIGHTS without the kids with some girl friends! To say I am excited would be a massive under statement!! Obviously i’ll miss the kids and we’ll probably end up talking about them the whole time and wondering what they’re up to but I literally cannot wait for some girly fun in the sun!! Also it’s good for the kids to have some daddy kid bonding time!
…but i don’t go until very early Friday morning so the plan will be business as usual until then..at which point i’ll jump on the plane and leave the kids with Daddy!!! The freezer is stashed so hopefully they’ll be ok foodwise…i’ve written a provisional plan above incase you want to follow that and i’ll obviously point this out to the hubby too although I imagine hubby will also be spoiling them with a couple of treats and possibly a lunch or tea out somewhere but it makes me feel happy to know that there is some lovingly prepared food in the freezer if they so wish! Ha they will so end up eating pizza and chips all weekend won’t they?!?!?
But back to the start of the week where I do have some sort of say in what the kids eat!

Monday – Chicken and Bacon Casserole
The kids DON’T have swimming this week as Maisie is performing in a concert (cute!) so i’m having one of her friends here beforehand so we’ll have an early tea so making a casserole is an easy one as it can be made beforehand and heated up as and when we need it. Tuesday – Mini lamb burgers
Everything is always better in mini form! I’ll keep these burgers really small, pack them with some mint sauce, red onion and garlic and serve in pittas with some lettuce and some fresh raita, which the kids probably won’t have but hubby and I most certainly will! Wednesday – Sausage and potato quesadillas
I’ll fry off some sausage meat with some onion, sage and garlic and then i’ll mix in some mashed potato. Add some grated cheese and then sandwich this in between two wraps and gently dry fry…i’ll serve with some veg for an easy and quick dins! Thursday – Fish Traybake
So this is such an easy dinner it’s barely even a recipe! Simply pop some veggies of your choice onto a baking tray, toss with some olive oil, some garlic powder and a sprinkling of cornflour (not essential) then bake in the oven for 30 mins at 180C…then take the baking tray out and place your cod fillets on top. Top with some sun-dried tomato paste and then some breadcrumbs and then place back into the oven for a further 12-15 minutes or until your fish is cooked through. I then sprinkled some steamed beans over the top for a pop of colour. The veggies used here are leeks, potatoes, sweet potatoes and courgettes but you could use new potatoes which would be good and some broccoli too with a squeeze of lemon to finish off…So so easy, so so simple!
