It’s so easy to make your own curry marinade and chances are you have most of these spices lying in your cupboard! If you’ve been following me for a while you most likely will as i do tend to use quite a bit of cumin and coriander! It’s my hubby’s influence!!
It’s so super easy to make though and i can show you below just how easy it is! It’s literally a case of throwing in all the spices with the yogurt, mixing it up and then letting the chicken marinade in there for a few hours.
So the first step is exactly that! Get all your marinade ingredients and throw those into a bowl with your chicken mini fillets.
Now mix it all together and then cover and place into the fridge for a few hours.
When you’re ready to start eating simply weave the fillets onto your skewers. If using wooden skewers you need to make sure you’ve soaked these in advance!
Now pop under the grill, turning occasionally until they’re cooked through.

Now it’s a case of putting it all together. So grab yourself some flatbreads. These are good served warm, add some spinach or lettuce, then your chicken and top with some fresh coriander, cherry tomatoes a good squeeze of lime and some yogurt gently spiced with some cayenne pepper!
What you need:
- Chicken mini fillets
- Flatbreads
- Fresh coriander
- Lime
- Natural yogurt or dairy free alternative
- Lettuce/spinach to garnish
- Some skewers!
What you need for the marinade:
🌟1 cup yogurt or dairy free equivalent
🌟1/4 tsp cayenne
🌟2 tsp turmeric
🌟 1 tsp each of ground coriander, cumin, garlic powder & garam masala
🌟1 garlic clove crushed
🌟1/2 inch ginger – grated
🌟2 tbsp lemon juice
What you need to do:
- Place some chicken mini fillets into a bowl and then add the marinade ingredients.
- Mix well.
- Allow to marinade for 4-6 hours.
- Once marinaded weave into some skewers.
- Place under the grill, turning occasionally until cooked through.
- Serve in flatbreads/wraps/chipattis with lettuce and spinach, yogurt, lime and coriander!
