Slow cooked sausage casserole with bacon and kidney beans! It’s like a big hug this meal…and perfect for a slightly miserable and cold day like we had today!
The beauty of using a crockpot or a slow cooker is that you can literally throw in a pile of ingredients with minimal prep and then just forget about it for the rest of the day! When you look at it again the work has all be done and you’re rewarded with this tasty and warming stew. So good! You have to try this one!
So what you need to do first is brown off the onion and bacon pieces. If your crockpot doesn’t have a saute setting simply do this over the hob in a heavy based casserole dish.
Once you’ve browned the onion and bacon add the sausages and brown these too. I use turkey sausages as they have way less fat in them than traditional sausages although of course any sausage would work in this dish.
So brown the sausages slightly and then pour in some wine to deglaze the bottom of the pan slightly then literally throw in the remaining ingredients. It really is that simple!
Then you pop the lid on, turn the slow cooker to low and cook for 6 hours….
Then when you’re ready to eat simply add some steamed green beans and some fresh parsley for some added colour and added veg
Then serve with some crusy bread…
So here’s what you need:
- 8 turkey sausages (you can leave these whole or chop into pieces)
- 3 carrots – chopped into thick chunks
- 1 red onion – diced
- 1 garlic clove – crushed
- 3 rashers of smoked bacon snipped into small pieces
- 1 tin of chopped tomatoes
- 1 tin of kidney beans
- Squeeze of tomato purée
- Fresh thyme – 3 sprigs or so
- Glug of red wine
- 300ml chicken stock
- 3 small sweet potatoes – Chopped into chunks
- 3-4 new potatoes cut in half
- Fresh parsley
- Green beans
- Crusty bread (optional)
..and here’s what you need to do:
🌟Start by frying the onion and bacon in a little oil.
🌟 Next add the sausages and brown
🌟 Now add the wine to deglaze the bottom of the pan, then add the veg and then all the other remaining ingredients and season.
🌟 Now set to low cooker mode and cook on low for 6 hours with the lid on.
🌟 When ready scatter some parsley over and add some steamed green beans.
🌟 Serve with some crusty bread to mop up the juices!
