Weekly Meal Planner – 28.01.2018

Hi everyone,

Wow I had such an amazing response from my meal planner last week and it was amazing to see so many of you trying out my recipes! Thank you so so much! It’s so lovely to hear from you all and get to know you all a little better through your comments and DM’s on insta and facebook. Keep them coming!!

I hope there will be some meals here this week which take your fancy and that you can replicate at home. I’ll try and do as many videos etc as possible again so you can see how the meals come together! I’ve provided a SHOPPING LIST, meal by meal for you as well. Just click HERE . I’ll update the recipes as soon as i’ve made them so you’ll have everything here in one place.

Monday TURKEY KEBABS, RICE AND TZATZIKI

So yes Monday starts with Turkey kebabs, which i’m going to grab from my freezer stash! Kids have swimming on a Monday so they’ll have packed teas so it will be an easy dins for hubby and I. I’ll make some tzatziki and serve with rice and peas. So for those wanting to make the kebabs and missed the recipe on instagam here’s what you need to do..after you’ve grabbed the ingredients from the shopping list!

  • Start by sweating a diced onion and grated carrot in a frying pan in a little oil. Then add a clove of crushed garlic. Cook until softened and leave to cool
  • Then mix with the remaining ingredients – turkey mince, 1 1/2 tsp Oregano, 1 1/2 tsp smoked paprika and an egg. Season well.
  • Mix well and then take a handful and mould it round a skewer in the shape of a kebab. (If using wooden skewers don’t forget to soak these first so they don’t catch under the grill!)
  • If you have time then place into the fridge to firm up
  • Once ready to cook simply place under the grill, turning occasionally until they’re cooked through.

You could also serve these in pitta’s if you want to forego the rice! If you want to cram even more veggies into this, try adding some grated courgettes too!

Tuesday  – FISH CAKES WITH CHORIZO AND CABBAGE

We have fish cakes with chorizo and savoy cabbage which i have left over from Sunday lunch! So i’ll chop this up finely and add to some cooked cod, cooked potatoes, add some lemon juice and then i’ll roll in flour, an egg and then some breadcrumbs. Yum! Serve with some added veg, courgettes perhaps! Nice and simple!

Wednesday – Veggie packed Mince & Rice Oven Bake

I’m going to try an oven bake with mince and rice. Whenever i make a bolognaise or mince type meal i always try and throw in as much veg as i can…i always include carrots, celery and courgettes! Cut nice and finely, i’ll mix the mince with some cooked rice and the pop into the oven with some grated cheese (dairy free half for my daughter)

Thursday – VEGGIE FRITTATA My new year’s resolution is continuing…one veggie meal a week…so here’s a nice and  easy veggie dinner..which is also  perfect for lunches if you have leftovers! It’s also a fab thing to make if you want to use up any leftovers..you could add red peppers, cheese if you’re not dairy intolerant, courgettes, herbs…all sorts! But for this one i’ll mainly focus on potatoes, mushrooms and broccoli which i think both of my kids will eat! (ha she says, famous last words!!!) For the full recipe click HERE!

Friday  – Has to be fish and chips doesn’t it!…but this time with a slightly healthier take. I’m going to coat the fish in some cooked quinoa (a recipe inspired by the lovely @mylittlefoodcritic who you can find on instagram!) Simply coat the fish in flour, then an egg and then some cooked quinoa and pop into the oven for 15 mins or so. I’ll serve with some homemade chips, probably a mix of sweet potato and white potato and some veg of course!

Now i’m not sure this needs a separate blog as the recipe isn’t strictly mine! So i’ll leave you here with a few pics…the method is literally as per the above,  dip your fish into seasoned flour, egg and then cooked quinoa. Place the fish onto a baking tray and then into the oven at 180C for 12-15 mins….

 

 

Saturday –  SAUSAGE CASSEROLE in the CROCKPOT I”m off to London on Saturday to meet some friends for lunch…without kids!! Whoop, such a novelty! Even getting the train up is an excitement…a coffee, magazine all to myself with not ONE mention of …..”mummy, mummy, mummy!!’ Bliss!…but before i go i’m going to pop some sausages and the rest of the ingredients into my crockpot so that dinner will be all sorted for the whole family for when i get back! (That’s the plan anyway!) Again take a look at the ingredients list on the shopping list. I’ll start by browning the sausages, then the onion and bacon and then i’ll throw all the other ingredients in and hope that the crockpot works its magic!

Sunday – Now  spatchcocking a chicken isn’t as hard as you may think!…but you can of course ask your butcher to do this for you. Otherwise check out my instagram stories as hopefully you’ll be able to see some vids up there on the method. Once you’ve spatchcocked your chicken you need to make the piri-piri sauce, based on a Jamie Oliver recipe and will serve with some carrot and potato mash!
