I totally forgot to post this recipe, it’s pretty self explanatory but just so you have all my recipes in one place here it is for you. This is such a winner with my son, he loves them!! Perfect for picnics, lunchboxes, quick snacks or just a quick dins. It’s also a great way to use up any leftover spaghetti you have in the fridge!
To make 6 nests all you need is:
- 2 eggs – lightly beaten
- 100g Cooked spaghetti
- 80g Diced cooked pancetta
- Handful of grated cheddar cheese
- Salt and pepper
What you need to do:
Simply mix the egg, cheese and pancetta in a mixing bowl. Season well and add the spaghetti. Coat the spaghetti well in the egg mix and then spoon into a well oiled muffin tin.
Bake in the oven for 10 – 12 minutes or until the egg is set.
Why not try: Adding some grated courgette into this. You can also make this with pasta. Here’s one I made with green lentil pasta and the added courgette. Yummy! Here i baked them in a muffin case which actually makes them very easy to transfer into lunchboxes and picnics etc..Also stops any egg sticking to the bottom of the pan!
