So for this you’ll need the following:

  • Handful of tenderstem broccoli cut into small pieces
  • 1 large carrot – cut into matchsticks
  • Handful of Sugar snap peas

  • Optional extras: Try adding some crushed peanuts, fresh coriander and a squeeze of lime to finish

What you need to do:

  • Start by cooking your noodles as per the packet instructions. Drain and then leave aside.
  • Now heat up a wok or large saute pan with some sesame oil.
  • Once hot add your ginger, garlic and chilli and fry for 2 minutes. This will help to flavour the oil
  • Next add the carrot and onion and fry for a few more minutes
  • Now add all of the remaining veg together with the oyster sauce, sweet chilli and soy and stir
  • Cook the veg for a couple of minutes, you still want them to have a crunch and then add your prawns. Fry until the prawns are cooked all the way through.
  • Now take off the heat and add the rice noodles.
  • Garnish with a squeeze of lime, some crushed peanuts and some fresh coriander.
  • ENJOY!
