Summer is here and BBQ season is upon us! Hurrah! (For those living in the UK anyway!)
I don’t know about you but i’m always looking for some tasty side dishes and interesting salads to go with my barbequed meats and fish. This yummy couscous is the perfect accompaniment. It’s quick, healthy, flavoursome and pretty easy to do too! It should only take about 20 mins and can be eaten hot or cold! It’s particularly good with lamb….
So, that said, why not try the couscous in a salad with added peas, tenderstem broccoli and spinach leaves and then top with these tasty minted lamb chops! mmmmm!
Or you could try the couscous with a slightly heartier dish like these slow roasted lamb shanks. The lemony couscous really lifts the dish and makes this a meal you can enjoy in the summer too!
