Hi everyone, How’s it going? Hope you’ve had a good week. Yesterday was super sunny and today we’ve got rain, rain, rain…with the change of weather you crave different foods so it’s tricky to get the planner just right! The rain is making me want comfort food and when the sunshine is out all i can think about is BBQ’s and picnic’s outside! Hopefully this has got a bit of a mix this week to reflect the random UK weather…hope you enjoy!
Monday – Picnic tea
We had this spread on the weekend actually but you could so easily do a similar thing on a Monday night, it’s also a really good way to use up any leftovers you have from the weekend! Just pop anything you have onto a big board and let the kids help themselves!
On this board we’ve got some smoked mackerel pate, melba toast, olives, cold meats, smoked salmon, green beans, patatas bravas, leftover spanish tortilla, tomatoes, brioche, apricots, chicken drumsticks, mushrooms, cucumber and some rosemary flatbread crackers..yum! Kids had a good feast with this one!
Tuesday – Homemade chicken goujons with baked sweet potato.
Baked sweet potato’s have become one of my daughters favourite food. She loves to just spoon out the sweet potato. She’ll easily polish off a whole potato without coming up for air! These chicken goujons are really simple to make as well…the usual wholewheat plain flour, then dip into beaten egg and then coat in wholemeal breadcrumbs (kids can help with this one!) and then pop into the oven for 20 mins or until cooked through. Easy meal for the start of the week!
Wednesday – Tandoori fish bites
I followed a recipe from Good To know – Tandoori Fish Bites. Really easy to follow and the kids loved this, i think because the fish was bright pink by the end of it!! I used haddock for this and it worked really well. I didn’t add the dressing to the carrots for the kids, they just had plain grated carrot which they seemed to enjoy…clean plates all round for this one!
Thursday – BBQ Chicken pieces with noodles
This is a great one if you’ve got some leftover chicken. It’s a lazy and quick meal to make midweek. It’s basically a stirfry of sorts but with BBQ sauce…
Start by frying off some red onion and garlic, then add some chicken to the pan and brown, next add some cooked broccoli and throw in some peas or any other veg you think your kids might eat! Stir through some of your favourite BBQ sauce and voila – easy, cheaty midweek meal. Serve with egg noodles and enjoy!
Friday – Spiced turkey burgers
This is a slightly more hands on meal to prepare but really quite simple too. The recipe i used is from BBC Good Food Spiced Turkey Burgers
You’ll need:
- 500g turkey mince
- ½ red onion grated
- 1 garlic clove, crushed
- 2 tsp Madras curry powder
- Handful finely chopped coriander
- 1 egg yolk
- 1 tbsp sunflower oil
- 4 burger bun
Saturday – Courgette and bacon risotto.
It’s been a while since i’ve cooked risotto but i’m so glad i did. The kids love it! This was really tasty and they also had lots of fun helping me to chop the courgettes and snip the bacon. Risotto can be a bit of a labour of love as you have to stand by the stove stirring but this was a winner and definitely worth taking the time to do..in our household anyway. I think the lure of bacon will win most people over!!
Sunday – Slow cooked pulled pork
This takes some time but it’s worth it! Slow cooked it keeps it’s moisture, it’s lovely simply with roast potatoes and veg but you could serve this on top of baked sweet potatoes..any leftovers you can use in sandwiches and lettuce wraps or pop into an omelette. See my instagram for these ideas! It’s the meal that keeps on giving so if you can put the hours in on a weekend you can have lots of meals during the week!
It’s half term for us next week so we’re off to sunny (i hope!)
