Monday – picnic, picnic ideas!…
Sandwich fillings: egg mayo pitta, smoked salmon sandwiches, chicken mayo with sweetcorn, sausage wraps, tuna mayo bagels, turkey and cucumber, hummus and ham thins, ham and cheese croissants…
Tuesday – Chicken, bacon and avocado pittas.
This is an easy and quick meal to prepare. Simply fry off some chicken pieces and bacon and pop into a serving dish. lightly toast some pitta bread, add some lettuce and some homemade guacamole (avocado mashed with some lemon juice, red onion, salt and pepper). If your kids aren’t keen on avocado, try adding some hummus instead?? Serve with some salady bits and enjoy! Perfect for these slightly lighter evenings!
Wednesday – Cauliflower, lentil and potato rogan josh.
My kids actually tend to eat a fair bit of meat and fish so sometimes it’s good to give them a break and have a meat free tea. This would taste great with chicken too but actually it’s not needed as the lentils in this dish keep the sauce thick and filling!
Thursday – Chicken fillets with mini jackets and gravy
This is probably my daughters favourite meal. Chicken and gravy! Simple and easy for a mid week meal!
Friday – Smoky pork and black bean taco’s

I love the type of meals which are interactive and get the kids involved! Making their own taco’s, choosing their fillings etc make mealtimes way more fun! Perfect family meal for a Friday night!! The smoky BBQ flavour makes this filling so sweet and tasty which is a definite hit with my kids!
Saturday – Chicken schnitzel with sweet potato wedges
I used a simple recipe from Sainsbury’s. Quick, simple and tasty. Exactly what you need as a busy mum! I used chicken breasts and smashed these with my trusty rolling pin. If you’re short of time you can buy chicken breast steaks so you can miss out the bashing part!!…although i find that part quite therapeutic if you’ve had a bad day!! Also the kids quite like doing the bashing too!!
Sunday – BBQ chicken wings
These are sooo good and so moreish! I stole the recipe from @mylittletum who i follow on instagram. Check her out! I didn’t have any sundried tomato paste so used normal tomato puree instead and these still turned out to be pretty good!
You’ll need:
- 2tbsp honey
- 3 tbsp dark brown sugar
- 3tbsp tomato ketchup
- 4 tbsp soy sauce
- 2 garlic cloves, crushed
- 1-2tsp sundried tomato paste or tomato puree
- Pinch of dried chilli flakes
What you need to do:
Mix all the ingredients together and then pour over and coat 8 chicken wings. Marinade for as long as you can, preferably overnight. I only had about 30 mins or so and they still tasted pretty good but i think with marinades, the longer the better!
Simply scatter onto a lined baking tray and pop in the oven and cook for about 45 minutes at 180 degrees C, turning half way. These can also be done on the BBQ – as we’re approaching BBQ season?! Serve with some green beans, potato wedges and corn on the cob. Enjoy!
